:: Diary Dates for all our Cookery Classes, Restaurant and Winery Events ::
As we add more cookery classes and planned events to our food for thought program we will add the dates to our diary dates, so please bookmark this page in order to keep informed of our many special events.
Starting at 10:00 am or 6.00pm with coffee on arrival, followed by a three-course demonstration.
You will finish up with a three-course lunch with wine tasting, allowing your day to end around 3:00 pm.
The secrets of cuisine classes are offered every Wednesday, Friday of each month from January through December. And we offer private classes on any other dates that you would like. |
| :: A Romantic Table for Two :: |
Join us as our Chef creates a romantic three-course lunch or dinner that you can surprise your loved one with, or surprise your friends. The focus will be on combining flavors that excite the palate by becoming stronger in taste. We will prepare the following three course meal:
To Begin: Wild Mushroom and Truffle Cappuccino with Porcini Dust and Crispy Parmesan Wafer.
Main Meal: Organic Salmon coated in Dried Grape Dust with Spring Vegetables and Fennel Tops.
For Dessert: Chocolate Fondant with Sticky Passion Fruit Centre and Cocoanut Lime Sorbet.
We will balance your table for two with the perfect paring of wines to compliment your dining experience. |
| :: The Cook and The Winemaker :: |
Spend time in our wine cellar with a barrow tasting discussing the role of how wines really do enhance the foods and bring out the flavors. Learn why Black Pepper is used in the kitchen on fresh strawberries or why some wines have a hint of pepper through them. Select your favorite wines from our cellar, and our chefs will balance your selection with a three-course luncheon or dinner dining experience . This class is all about what wines you select and therefore you direct which menu we will create for you.
Most certainly a class of what we call a black box – where we don’t know the ingredients just yet – or is it a black bottle!!!
Recipes will include you enjoying a starter, main and dessert with a full recipe pack to take home and your own wine recommendations. |
| :: The Best of the Okanagan Farmers Market :: |
A trip to one of the Okanagan’s many farmers markets with their special ingredients and abundance of fresh fruits and vegetables is a must for any body living or visiting the region. We will take a selection of the freshest, seasonal vegetables, fruits and meats and create a healthy, almost organic dining experience that you can repeat in your own home.
The point of the class – to taste a fresh three-course dining experience using the best produce, but we also want you to taste and compare as we are cooking the same ingredients that either cost less or are not from farmers market that many of us use on a daily basis.
And then you decide which tastes better. |
| :: Summer Flavors of London and Paris :: |
Some say Paris offers the most romantic of foods, some would say London as now surpassed Paris in the culinary department. Having spent time in both cities dining and working I would agree with neither.
This class will demonstrate that by combining the simplicity of French stocks and sauces with natural ingredients the French are able to create masterpieces of rich foods with complete balance.
We will then showcase a similar dish from London that uses the same components but offers a more urban flair to the overall dish both in taste and presentation.
Either way you will enjoy a three-course dining experience with wine tasting and you can decide is it to be London or Paris? |
| :: Delight in Wine and Cuisine :: |
For our guests who really like to enjoy a dining experience and don’t need a reason to have friends around for dinner, this class is for you.
The theme of the class is tasting menus, that offer you smaller amounts of two or three key ingredients on the same plate, for example a trio of desserts consisting of mouse, chocolate and lavender brulee.
We will create for you a culinary creation that by using the same ingredients you can create various tastes on the same plate.
We will balance these combinations with wines and fruit wines that really do draw out the flavors of the multiple dishes.
At the end of the class you will have experienced three dishes, all with combinations on the plate that will offer you a tasting menu you can serve to your friends and family. |

Sugar, Spice and all dishes iced…..well almost.
Join our pastry chef and baker as we create a selection of desserts that you can impress your guests with. Like most desserts a little savory are required to complement your class.
From the classic of French Bread and Butter Pudding to Soufflé, from Grapes rolled in Blue Cheese and Crushed Pistachio Nuts made to look like a Bunch of Grapes to Sweet and Savory Cheese Soufflé.
You will still enjoy a three course lunch but it will focus more on sugar and spice ….. |

It’s the summer, or almost and we don’t have time to cook and if we do, then we need it to be fast and delicious.
This class is all about creating a starter, main and dessert that you can prepare in advance and still enjoy the day with out having to salve over the stove.
The amazingly colorful and abundant summer produce lays the groundwork for a summer lunch or dinner celebrating local Okanagan foods.
Definitely a 'cooking class to patio experience', recipes may include organic salmon with puree of olive tapenade, fried zucchini blossoms to rhubarb and strawberry confit. |
| :: Food and Wine Lovers Vintage Bygone Creations :: |
Celebrate a bygone era with this very special class. The whole class is themed on the late Mrs. Beeton, who was the first ever chef to have a recipe book published, back in 1861.
This class is most exciting as it will focus on classical dishes that use both Mrs. Beeton’s recipes and that also add a modern interpretation, and when you actually follow Mrs. Beeton’s recipes you will see she was well before her time.
Step back in time and enjoy a class of poaching, braising and steaming.

| :: Harvest Time in the Okanagan :: |
We head to our chefs table where we have an abundance of freshly harvest ingredients for this class.
The amazingly colorful and abundant fall produce lays the groundwork for a harvest dinner celebrating local Okanagan foods. We'll prepare a feast of warm beet salad with wine jelly vinaigrette, beet soup, roasted chicken with apples and fruit wine sauce, classic apple tarts and a decadent peach and berry-chocolate tart.
Add to this a tasting of Okanagan fruit wines and it’s a celebration of harvest time. |

What is your favorite culinary creation?
When you sign up for this class you will be asked for your three favorite dishes from our favorite culinary creations menu and the class will focus on the dishes that receive the most votes.
The class will create a three-course dining experience based on the selected dishes and create them as a lighter lunch option and a dinner option that is a little more substantial.
Our chef will also prepare his favorite sorbet and soup to balance the dining experience. |

Each autumn in Europe, there is much ado about changing the menus and introducing the new seasonal produce that will feature on may a menu for the next 3 months.
We will focus this class on European gourmet chefs that have created new dishes that truly represent autumn in Europe.
Learn how to incorporate all things herbs – sage, thyme and parsley into a hearty autumn fair that will bring your family friends to the table time and time again. |

Our elegant intimate dinner class creates a delightful three-course dinner that offers you a menu of indulgence and culinary delights.
We will focus on the menu preparation, the finished table and the coffee with petit-fours in the lounge afterwards.
If you are one of our guests who likes to prepare well in advance, this class will serve you well for valentines also.

So you’re having your friends over for a celebration of sorts and there is more than two.
If so, our class will over you valuable information of what menu to use, how to fill the spots when you need some time with little tasters and above all else what to do in advance so that you above all else get to enjoy your evening.
This cookery class will really benefit you in bringing all the ingredients together at the same time whilst keeping you sane and keeping the dinner party fun for all.

You are getting everybody together for the holidays and there is no place to sit!!
What you need is a menu of canapés and cocktails designed to be enjoyed as you stand, mingle and entertain!
Especially wonderful is menu that can be prepared ahead of time for a stress-free gathering, like crusted crab cakes, honey shrimp, sesame-wasabi crusted tuna, Parmesan-pepper biscotti, and rosemary skewered lamb with maple curry sacue.
Of course, there must be cocktails and our Icewine Martini is always a sure hit, and can be made in advance, but not the frozen grapes. |
