New research means doctors and scientists are calling it one of the 'functional' foods - foods that are not only nutritious but help prevent and protect against disease.
Our Vinegars are started from the original "mothers" we brought with us from our winery in Europe. Like old yeast from the last patch is used in order to make great European bred, The "mothers" of wine vinegar is used over and over from the original "mothers" barrel, which may be 100's of years old. The original "mothers" we use is from our earliest vinegar barrel from 1790. All our vinegar tanks are locked up with only a family member having a key to open it when it is bottling time. All our vinegars have aged for at least 10 years in the original "mothers" before release for sale.
